Easy Veggie Stew

bowl of Veggie StewWhen the veggie drawers in my fridge need some emptying, I make this super easy and delicious one-pot, one-drop stew. No fancy gadgets, no fuss. You drop it all in the pot, and cook for 45 minutes. Easy peasy!

A ThriftyFun contributor, Likekinds, recently asked if frozen tomatoes are edible. In a cooked meal like this? Absolutely! Here, I've used 2 large frozen tomatoes straight out my freezer. It made the meal.

Prep Time: 10 minutes

Cook Time: 45 minutes

Total Time: 55 minutes

Yield: 4 servings

Ingredients:

cut vegetables
 

Directions:

  • Add all ingredients except salt and pepper to a large pot. Add enough water so it's level with all the ingredients (don't cover with water). Bring to a boil, cover, and simmer for 45 minutes. Add salt and pepper to taste.
