When I first planted my rhubarb plant in 2009, I was told not to eat any stalks until 2010. If I transplant it it before the winter, should the same rule apply?

I've heard of never eating the leaves, which are poisonous, but nothing about the stalks. I planted a few a couple of years ago but they never really grew so I can't say personally.
