Diamond Post Medal for All Time! 1,246 Posts I love the taste and convenience of Egg McMuffins but I don't visit fast food chains anymore. This is a way to get the same kind of breakfast quickly using a mug and a microwave. The dough turns into a soft and fluffy English muffin and there's a perfectly cooked egg in the middle. I've made this with gluten free flour and it's worked out perfectly.
Prep Time: 5 minutes
Cook Time: 2 minutes
Total Time: 7 minutes
Yield: 1-2 servings
Ingredients:
- 4 Tbsp all-purpose flour
- 1/4 tsp baking powder
- 1/8 tsp baking soda
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 Tbsp milk
- 2 tsp cooking oil or melted butter
- 2 eggs
- 1/4 cup grated cheese
- 1 Tbsp peppers, chopped
Steps:
- In a large microwave safe mug, mix the flour, baking powder, baking soda and salt with a fork.
- Add in the milk, black pepper, oil, 1 of the eggs, cheese and peppers. Mix together until just combined.
- Dough should be thick enough for you to start pushing it up against the sides of the cup. If not, add a bit more flour and mix.
- Make a well in the batter and crack in your other egg into the center.
- Move the batter from the sides of the mug over the top of the egg. Make sure it's fully covered.
- Place mug in the microwave and cook for 1 to 2 minutes, depending on the power of your microwave. Keep a close eye on the mug to make sure the egg doesn't overflow.
- Enjoy while warm. The perfectly cooked egg in the middle is a lovely surprise!
