I like to make egg salad to last a couple of days. I use it for parties, open faced sandwiches and cool stuff. It is easy to make and super nutritious. It is a delight of the senses.
I say '20 slices' bread if you are serving it all. Just one slice and one tablespoon or so of the egg salad per serving, plus one slice cheese and tomato. Garlic is optional though I am personally a garlic fiend.

I will stick with a dash or two of garlic powder, I'm not a garlic fiend. I have cubed sliced American cheese and added it to the egg salad. I thought it was good but not enough to add it again.
I'm going to try your sandwich. Everybody knows hot melted cheese is much better than cold cheese any day.
What kind of mayo is that? It doesnt look white. Is it spicy?
