Melt butter or margarine. Stir in flour until smooth. Add milk. Cook over medium heat, stirring, until moderately thick. Remove from heat and stir in flavoring and salt to taste. Drain tuna if oily. In a greased casserole, make layers of tuna and crushed crackers, reserving a few cracker crumbs for top. Pour white sauce over layers and sprinkle crumbs on top. Bake at 350 degrees F for 30 minutes.

Made it tonight. Very good. I added dried minced onion, pepper and garlic powder. If you end up filling the casserole to the top, add about 5-10 minutes to cooking time. Keep up the good work, Robin! (02/03/2007)
