Grease 12 muffin cups or line with paper bake cups; set aside. Combine apple, sugar, carrots, walnuts, and cranberries. Combine flour, baking powder, cinnamon, baking soda, and salt in another bowl. Stir in apple mixture. Mix well. Combine egg and cooking oil. Add to fruit mixture. Stir just till moistened (batter should be lumpy). Spoon batter into prepared muffin cups, fill 2/3 full. Bake in 375 degrees F oven 15-20 minutes. Cool in pans on wire rack 5 minutes. Remove from muffin pan. Makes 12.
