Everyone loves this on a cold winter day. We eat it like it is, but it also tastes good with cheddar cheese or bacon sprinkled on top!
Total Time: 2 hours cooking, 1/2 hour prep
Yield: 8

Ingredients:
- 1 large onion, chopped
- 5-7 potatoes, peeled and cubed. (the smaller the potatoes, the more you need)
- 3 carrots, peeled and cubed
- 4 ribs of celery, chopped
- water to cover
- salt and pepper to taste
- 1-2 chicken bouillon cubes
Steps:
- Saute the onion until transparent. Add the potatoes, carrots and celery. Add water to barely cover the potatoes. Season with the bouillon cubes and salt and pepper. Bring just to a boil, then simmer 1 1/2 - 2 hours.
- Serve as it is, or use an immersion blender to smooth it out.
