My grandson Lance loves Fig cookies!

Ingredients:
- 1 lb dried figs or 2 lbs. fresh figs
- 1 cup sugar
- 1/2 cup water for fresh figs
- 1 cup water for dried figs
- 1/2 cup butter, room temperture
- 1 cup sugar
- 1 egg
- 1 Tbsp cream or milk
- 1/2 tsp vanilla
- 1/2 tsp salt
- 1 3/4 cup flour
- 1 tsp baking powder
Steps:
- Soak diced figs in water for one hour. Add sugar, cook on medium heat until a thin jam consistency. Beat sugar, butter, egg, milk and vanilla until well blended. Add dry ingredients. Mix well and refrigerate for one hour.
- On well floured surface, I mean really well floured surface, place 1/2 of the dough; knead about 6 times.
- Roll out to 1/4 inch thick.Line 13 x 9 inch glass dish; cover with figs. Roll remaining dough, cover figs.
- Cook at 350 degrees F for 30 minutes.
- Let cool and cut into squares.
