I have been reading past posts about gritty fudge. I have been making this fudge for over 50 years. Last year I started having big problems with it coming out gritty. I made 120 single batches last year. I had 22 bad (gritty) batches. I thought it was my burners, but I guess not. So far this year I have made 21 batches and only 7 have turned out non gritty. What is going on?

Have you switched brands of peanut butter? If not, maybe your peanut butter had its recipe changed. If everything else is still the same, thats probably it. You may have to find another brand
I am using the same milk, peanut and butter. In fact i use 2 different brands of both the peanut butter and the milk. I just do know how after all these years this can happen.
Are you picky about the sugar you use? I find that cane sugar has a better consistency than just any brand of white refined sugar. Unless the bag specifically states that it is cane sugar, it is more than likely beet sugar. For some reason they just don't come out quite the same
Well, I did break down and go to Sam's and buy Domino sugar as well as Jiff PB. I also have taken some other suggestions like buttering the side of the pan and scraping the side of the pan before adding the PB. i also have brought my wooden spoon out of retirement. I had use that spoon for over 50 years. I really think that is what it was.
