Pick, blanch them (dipping into boiling water for about 45 to 60 seconds). Then plunge into very cold water and soak for about 5 minutes. Pull out, dry off and cut to desired sizes. Make sure they are dry. Put into a freezer bag and freeze. This is how I do it. Freezing them whole makes them mushy.

I have frozen them successfully without blanching
