I clean them as if they were going to be used immediately. I then dice them into small pieces and measure them in about 1/2 cup measurements into baggies and put the baggies inside a plastic food storage container; so that they don't end up all over the freezer, and just pop them in the freezer.

I wash the bell peppers, then I dry them off with paper towel,then I slice them open,and get rid of the seeds.Then, I first slice then in to strips,and then cut each strip into chunks(whatever size you want them,but I cut them into small chunks). After I cut them into chunks,I then put them in gallon sized freezer bag,zip the baggie almost all the way,and mush(same as squish) all the air out of the baggie,and zip it the rest of the way.

Lay them flat,and they won't bunch up in a wad.Weezy

I've frozen them whole (in a ziploc) or just sliced up and put in ziploc. Works well either way. We've also frozen bell peper sliced with onions for stir fry.

If you like stuffed peppers: Cut the tops off and clean them as you would for stuffing and parboil for about 3 to 5 minutes. Drain well, place upside down on a cookie sheet, flash freeze then bag them. When you get ready to make stuffed pepper just make up mixture while peppers are thawing.

Fill and bake as you would for fresh. You can't tell the difference in taste and you have a lovely dish for much less cost than buying the peppers in the wintertime when they are so expensive. Yum! Yum!

I clean and cut them up in 1" size pieces. Put in plastic bags and freeze. They only freeze well if used for cooking. I use them for my recipe "Stuffed Pepper soup" I have stuffed whole peppers and froze them also.

I wash them, chop them after removing the seeds and spread them out on a cutting board. I put them in the freezer then when they are frozen I put them in a zip lock bag.

I have been doing this for years and also with celery.
