One of the first lessons I learned in home ec many years ago was you can freeze mayo, but don't. It separates and gets icky.
Best (for us at least) just to buy the small jar and not worry about it since we use so little of it.
It will change in consistency if you do. It is only egg and oil. You can make it yourself in small amounts
Mayonnaise will separate and be unusable if frozen.
Mayonnaise in an unopened container has a very long shelf life and mayonnaise in an opened container will keep for several weeks (most say months) if not left out of refrigerator for long periods of time.
The secret to keeping opened mayonnaise safe is to never leave it out of refrigerator very long (minutes), always use clean utensils if dipping from the jar/container, clean rim before closing and close/seal tightly before returning to refrigerator.
If mayonnaise has to be left out for more than a few minutes, remove what you may need to another bowl/container and discard any leftovers.
This also applies to any food that has mayonnaise as an ingredient.
Safe for a short while but should be kept under refrigeration/ice as much as possible. (potato salad, deviled eggs, etc)
