Freezing Uncooked Potatoes

No, they don't freeze well raw. You can freeze mashed potatoes. Scalloped or au gratin potatoes freeze OK. For french fries, cut raw spuds into strips and fry at moderate temperature till the potatoes are pale and not crisp but partially cooked inside. Freeze at this point. A second frying will give you crisp brown fries.
