How do I freeze uncooked potatoes? I have a huge surplus of potatoes and would like to know if and how to freeze them.

I myself have not done this but a friend of mine will freeze home made hashbrowns and raw fry type every year. The biggest thing was to cook them a bit not until all the way done, but still firm. If you don't cook them, they will turn black-brown in color.

Why freeze them? They will last a long time in a cool place.
The potatoes I buy at the grocery store last only 3 to 4 days before turning green, therefore, the ability to freeze them would be very helpful. I will try these suggestions.
I have always kept potatoes in one of the vege/deli drawers of my fridge. They last a very long time. No need to freeze. Just make sure you store them without anything else in the drawer.
I slice mine for French Fries & blanch them, just like vegetables, then freeze on a sheet pan & throw them in a freezer bag. Homemade fries!
