Fresh Apple Cake

Ingredients:

• 1 3/4 cups sugar
• 1 1/2 cups oil
• 1 tsp. vanilla
• 2 eggs
• 2 1/2 cups flour
• 1/2 tsp. salt
• 1 1/2 tsp. soda
• 3 cups chopped apples
• 1/2 cup coconut (opt.)
• 1/2 cup chopped nuts (opt.)

Directions:

Cream together sugar, oil, eggs and vanilla. Beat well. Then add rest of ingredients. Pour into 9x13 inch pan. Bake at 350 degrees F for 1 hour.

Topping Ingredients:

• 1 cup brown sugar
• 1 1/2 Tbsp. cornstarch
• 1 Tbsp. margarine
• 3/4 cup water

Topping Directions:

Stir all together and cook until it's thick or until it looks clear. Put on cake immediately. Cake may still be warm.

Hey, Robin.This isn't really about the apple cake.Just that I'm impressed that you send in so many good recipes so often.I've been wondering if you are a professional cook or caterer?
