How much fresh broccoli do I need to feed 60 people?
3-4 ounces per person.
Depending on what else is being served, I would allow a small helping as it is a strong-tasting vegetable - say about 4oz per person. For 60 that would be 15lbs, say 20lbs if you do not intend to serve the stalk (which I may say is delicious). But better allow a little over for emergencies, or big appetites. You know your guests and can best judge whether they tend to over or under-eat. Good luck with your meal!
An average stem of broccoli would serve 3 to 4 people so about 15 to 20 stems
Depending on what you are serving with your dinner, as in a fresh salad or another vegetable, I would calculate 1 pound of broccoli per 8 persons. That figures out to 7.5 pounds of broccoli. If you think of the serving size you would get in a restaurant, it is usually two short stalks.
It seems you are having a "feast" for 60 people or you have already had your dinner - either way - if you ever need this type of information in the future - check out what books the library has on this subject. Most likely you will be able to find several books that will give you very specific details.
I love my book "Cooking For Crowds For Dummies" but there are also many others.
Hope you have fun doing this "entertainment".
