How many brocoli will I need to buy and cut up. I thought about 9 will that be enough.
Depending on what else is being served, I would allow a small helping as it is a strong-tasting vegetable - say about 4oz per person. For 60 that would be 15lbs, say 20lbs if you do not intend to serve the stalk (which I may say is delicious).
An average stem of broccoli would serve 3 to 4 people so about 15 to 20 stems
Depending on what you are serving with your dinner, as in a fresh salad or another vegetable, I would calculate 1 pound of broccoli per 8 persons. That figures out to 7.5 pounds of broccoli. If you think of the serving size you would get in a restaurant, it is usually two short stalks.
