Yummy way to use up leftover Mac and Cheese. Amount of ingredients will depend on the amount of leftovers and size of the Mac balls. I like Dijon mustard as a dipping sauce :-)
Shape macaroni and cheese in to balls meatball style. Roll in tempura batter mix. Dip in eggs and roll in tempura batter mix again.
Heat enough oil to completely cover the Mac balls in a deep fryer or saucepan. Once oil has heated quickly but carefully place Mac balls one at a time in the oil. (Make sure oil is hot enough or the Mac balls will be soggy and fall apart.) Fry until Mac balls are golden brown, about one minute. Remove, drain on a towel and serve.
