Fried Matzo

Simple and quick to prepare. Can be enjoyed for breakfast, lunch, or dinner. Comfort food, which brings me back to my childhood.

Ingredients:

  • 4 sheets matzo
  • 4 eggs
  • 1/4 cup milk
  • salt and pepper to taste
  • 1 Tbsp. butter

Directions:

Break matzo crackers into small pieces. Pour water into a shallow baking dish. Immerse matzo in water for a few minutes, until the matzo becomes softened. Drain matzo in a colander.

When completely drained, pour matzo mixture into a large bowl. Add eggs, milk, salt, and pepper. Mix all the ingredients together until well blended.

Melt butter in a frying pan. Once the butter is melted, add matzo and cook over low to medium heat, turning frequently with a spatula until lightly browned.
