This fresh, minty frosting goes great with zucchini bread or cakes! Using basil as the unique compliment to the lime, this is a real summer taste treat! A nice change from the store bought, overly sweet, generic tasting icings sold! ENJOY!

Yield: Frosted 2 zucchini breads or one cake - may double recipe.

Ingredients:
- 8 oz soft cream cheese, at room temperature
- 1/2 cup butter (1 stick), at room temperature
- 1 juice and zest of 1 fresh lime (or 1/4 cup of bottled juice if desired)
- 1/2 cup confectioners sugar
- 1/2 cup basil leaves
Steps:
- Cream together cream cheese, butter and confectioner sugar.
- Finely chop OR process most of the fresh basil leaves. Optional: you may place one or two on the top of the iced zucchini bread or cake if desired, just to be pretty.
- Mix basil and juice and zest of lime into the cream cheese/butter mixture.
- Frost your favorite cake or sweet bread for a fresh, unique summer treat!
You may also dip fruit into it on a tray for a fancy summer party, just add a spoon or two of slightly warmed milk to thin it. Try it!
