Silver Post Medal for All Time! 355 Posts This meal screams "garlic and basil". Wow! Any Italian food lovers dream come true.
Ingredients:
- 1 lb Italian sweet sausage meat
- 1/4 cup grated Parmesan cheese
- 1/2 Vidalia onion, chopped
- 1/2 large green pepper, chopped
- 6 cloves garlic, chopped
- 6 large basil leaves (I roll my basil leaves first then chop or slice them)
- 1/4 cup scallions, sliced
- 1/2 stick butter
- 2 Tbsp olive oil
- 1/8 teaspoon each Italian seasoning, garlic powder, oregano, black pepper
- 1 lb shell shaped pasta
- 1 can diced tomatoes (14 oz)
- 1 cup chicken broth or more if desired
- 1 package frozen spinach (10 oz.) (I would prefer fresh baby spinach but didn't have any)
- 1 package fine shred Parmesan cheese (8 oz)
Steps:
- Mix sausage meat with grated Parmesan cheese. Roll into mini meat balls, and set aside.
- Using a large covered skillet, add the butter and olive oil, at up to med-high heat. Add all the chopped and sliced vegetables. Let them simmer and stir them rapidly.
- Add the rolled sausage balls and thawed spinach.
- Add the can of diced tomatoes and a half can of water.
- Stir this and let this simmer for a few minutes. Then add the chicken broth. Cover and let this cook for about 15 minutes. Add extra chicken broth if you need it.
- At this time cook as directed the pasta, al dente. Then strain and rinse under cold water.
- Shut the heat off of the skillet. And pour the sauce over the pasta if you would like, or you can serve the pasta and the sauce over each individual plate. Add a heaping amount of shredded Parmesan cheese on top, garnish with a basil leaf.
- The flavors of the fresh garlic cloves and fresh basil leaves are so fantastic. Mangia!

Yum! I love garlic and basil. I have never tried this before but totally must do so!
