I got this great recipe from one of the vendors at my local farmer's market as part of a kale salad recipe. I've made it to go with several different green salads and it's always a winner - so tangy and fresh! I like it better than other dressings I've gotten at the store and have had several requests for the recipe.
*As with most vinaigrettes, a serving is going to be closer to 1/2 Tbsp. than your typical 2 Tbsp. salad dressing serving.

Ingredients:
*Store ginger root in the freezer. It will grate much easier with frozen. I find that using a micro-grater works the best.
