Girl Scout Samoas Cookie Pie

Ingredients:

• 1/2 cup unsalted butter (1 stick), melted (don't use margarine)
• 1 large egg
• 1/2 cup light brown sugar, packed
• 1 tsp vanilla extract
• 1 1/4 cup flour
• 1/4 tsp salt
• 3/4 cup semi-sweet chocolate chips, for sprinkling
• 1 1/2 cup sweetened shredded coconut
• 2/3 14 oz. can sweetened condensed milk (about 10 ounces)
• 4 to 5 oz salted caramel sauce
• 3/4 cup semi-sweet chocolate chips, melted for drizzling

Steps:

1. Preheat oven to 350 degrees. Spray a 9 inch pie plate with cooking spray. In a large microwave-safe bowl, melt butter, about 1 minute on high. Let cool for about 5 minutes and add egg brown sugar, and vanilla. Whisk mixture together until blended and smooth. Put flour and salt into mixer bowl. Mix lightly. Add butter mixture and mix again until blended and smooth. Do not overmix.

2. Turn batter out into prepared pie dish, smoothing the top lightly with a spatula. Bake for about 10 to 12 minutes or until edges firm up slightly and center will have begun to set up a bit. Remove from oven and sprinkle chocolate chips over top, then sprinkle coconut over top of chocolate chip layer, then pour sweetened condensed milk evenly over top, and pour final layer of caramel sauce evenly over top. Return to oven and bake an additional 25 minutes.
   
   *Cookie may not look done after 25 minutes but when you take it out of oven, it will continue to cook and set.
