Last August, as we were passing though Greensboro, NC, we stopped by the State Farmer's Market and bought a hand basket of peaches. I needed the basket for picking vegetables in the garden and thought I could freeze the extra peaches. I'm down to one package of frozen peaches and now I wish we had purchased a bushel.
We didn't eat any until a couple of months ago when I started experimenting making peach cobbler. We have found it to be irresistible and even better the next day, so I try not to make it too often.
To freeze the peaches, I cut them in small pieces and added a little sugar. I put 2 cups of peaches into each quart Ziploc freezer bag.
