Ingredients:
- 1 medium banana
- 1 small kohlrabi
- 1 cup cooked organic black bean spaghetti, Gluten free - diced* (optional)
- 1/4 cup chia seeds
- 1/2 cup gluten free all-purpose mix
- 1 large egg
- 1 Tbsp macadamia oil or olive oil
- 1 tsp vanilla
- 1 tsp honey
- 2 Tbsp water
- 1/2 tsp cinnamon (optional)
- 1/2 cup cooked or canned mushrooms (optional)
Steps:
- Follow directions on Organic Black Bean Spaghetti gluten free package. Cool. Dice black bean spaghetti into tiny pieces.
- While spaghetti is cooking, remove skin on kohlrabi. Grate or shred kohlrabi.
- Put banana and water in blender. Blend banana and water until smooth. (I usually use a thawed frozen banana).
- Beat egg. Mix gluten free mix, egg, banana mixture, oil, honey and vanilla. Fold chia seeds into mixture. Fold kohlrabi (and mushrooms) into mixture. Fold spaghetti into mixture.
- Heat an oiled frying pan over medium heat.
- Spoon in mixture. Put a lid over the pan.
- When brown on first side, flip over. Remove lid. After both sides are cooked, put on plates.
- Sprinkle cinnamon on top and serve with honey (optional).
*I found the Organic Black Bean Spaghetti in a local supermarket. Also, it is sold online.
