Gluten Free Kohlrabi Fritters

Ingredients:

Steps:

  1. Follow directions on Organic Black Bean Spaghetti gluten free package. Cool. Dice black bean spaghetti into tiny pieces.
  2. Advertisement

  3. While spaghetti is cooking, remove skin on kohlrabi. Grate or shred kohlrabi.
  4. Put banana and water in blender. Blend banana and water until smooth. (I usually use a thawed frozen banana).
  5. Beat egg. Mix gluten free mix, egg, banana mixture, oil, honey and vanilla. Fold chia seeds into mixture. Fold kohlrabi (and mushrooms) into mixture. Fold spaghetti into mixture.
  6. Heat an oiled frying pan over medium heat.
  7. Spoon in mixture. Put a lid over the pan.
  8. When brown on first side, flip over. Remove lid. After both sides are cooked, put on plates.
  9. Sprinkle cinnamon on top and serve with honey (optional).

*I found the Organic Black Bean Spaghetti in a local supermarket. Also, it is sold online.
