I experimented making a gluten free Peach cobbler by using gluten free bisquick. It turned out irresistible. I tasted it when it came out of the oven and couldn't keep my spoon out of it while cooking dinner. After dinner, I just had to have another piece. My husband wanted a second helping also. He said all it needed was a scoop of ice cream on top. When we started doing the dishes, he looked at what was left of the peach cobbler and asked me, "Did you eat that much?" I couldn't deny it.

I found the Gluten Free Bisquick at Walmart. It is in the section with the regular Bisquick.
I would like to add that this needs to be baked until it is firm in the middle. Sometimes it takes a little longer than 35 minutes.
This peach cobbler also freezes well. I took the leftovers and cut into serving sizes. I wrapped each square in Glad Cling Wrap and put them into a zip lock freezer bag. When I want some I just take out a square.
To heat it, I have put it in the microwave and also put it in my toaster oven. I like the toaster oven method best as the top comes out crunchy. To heat it in the toaster oven, place the frozen cobbler on a pan and put it into the cold oven. Set temperature on 400 degrees and bake setting. Bake for about 10 minutes.
Question? If I use fresh peaches, how much liquid do I use?
I used canned peaches that I made and it turned out yummy.
