This is an excellent recipe for a potluck dinner. You had better make 2! It is a delicious blueberry pie made with a graham cracker crust and, if you will pardon the pun, it is "easy as pie" to make. Sorry that I didn't have a picture. It was gone before I got a chance to take a picture.

Ingredients:
- 1 ready made graham cracker pie crust
- 4 cups fresh (or frozen) blueberries
- 2/3 cup sugar or you can use half sugar and half Splenda
- 7 Tbsp corn starch
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 2 Tbsp lemon juice
- 3 Tbsp water
- 1/4 cup sugar or you can use half sugar and half Splenda
- 1/2 cup flour
- 1/4 cup cold butter
Steps:
- Preheat oven to 375 degrees F. Pour 4 cups fresh or frozen (no syrup) blueberries into ready made graham cracker crust. There should be enough to round up in the crust. You may have to add a few more as they will settle as they bake.
- Combine the sugar, cornstarch, and spices in a small bowl and mix thoroughly. Add the lemon juice and water and stir well. Pour all over the blueberries.
- Mix together the sugar and flour, and cut the cold butter into it until it is crumbly. Sprinkle over the top of the pie.
- Bake at 375 degrees F for 1 hour.
If you prefer, you can use a regular pie crust with either the crumb topping or a second crust, or even a lattice crust. But the "easy" part is the pre-made graham cracker crust.
