My Grandma was an excellent baker. This recipe was one of her go-to favorites. It came from and old cookbook. It used to use solid baking chocolate but my grandmother cleverly substituted with cocoa powder and oil to stretch a dollar! :)
Prep Time: About 30 minutes, plus a couple hours chill time in the freezer
Cook Time: 10 minutes
Yield: several dozen
Ingredients:
- 1/2 cup canola oil
- 1 cup cocoa powder
- 2 cups white sugar
- 4 eggs
- 2 tsp vanilla
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup powdered sugar
Steps:
- Mix the oil, cocoa, and granulated sugar.
- Add the eggs last, one at a time. Stir in the vanilla.
- In a separate dish, stir together the flour, baking soda, and salt until well incorporated.
- Add the flour mixture to the wet ingredients and stir well.
- Place the dough into a container and freeze for several hours to firm.
- Once firm, make sure to preheat your oven to 345 degrees F. My grandmother had it down to a science; the 5 degree difference makes what was a finicky recipe more reliable.
- Taking a small spoon, scoop up enough dough to make a 1 ½ inch round. Form into a ball, then roll the top half in powdered sugar.
- Place on nonstick cookie sheet. Alternatively, use a cookie sheet lined with parchment paper. Bake the cookies for about 10 minutes in a 345 degree F oven.
- Let cool on the baking sheet before digging in, otherwise the cookies will fall apart. Once cooled, they should be a little crisp on the outside and soft, not gooey, on the inside. Enjoy!

How much flour is used here? Also, is one cup cocoa correct? Want to make these, but thought recipe was missing some amounts. Thanks!

It is 2 cups flour. It was missing from the recipe. I have fixed the recipe to show this change. :)
