Silver Post Medal for All Time! 355 Posts I have been making this salad for my family for years! It is a meal by itself with lots of great healthy vegetables and a light Greek salad dressing. It is a big hit at all picnics and BBQs.
Ingredients:
- 1 box tri-color rotini
- 1/2 cup celery, chopped fine
- 1 seedless English cucumber, peeled and diced
- 2 small red & green peppers, sliced, and chopped fine
- 2 - 3 plum (Roma) tomatoes, diced
- 2 Tbsp red onion, diced
- 1 medium carrot, grated over the bowl
- 1 small piece broccoli, cutting into very small flowerettes
- 1 small can sliced black olives, drained
- 1 small jar stuffed green olives
- 1 pkg (6oz) crumbled feta cheese
- 1 Tbsp sugar
- 1/2 tsp black pepper
- 1 tsp garlic powder
- fresh basil, chopped
- 14. Greek salad dressing
Steps:
- Start by cooking the pasta until done, drain and run under cold water. Set aside.
- Cut and chop all your vegetables and put them in a large bowl. Into the bowl, add the olives and cooked, cooled pasta. Stir wèll. Stir again just before serving.
- I have added deli cubes ham and cheese and it is more like an Antipasto! This picture dish last along time due to using a lite salad-dressing. As you can see, I added seasoned strips of chicken breasts on top of my salad. You can basically put anything on this salad or eat it just the way it is!
- Create new ideas for pasta salad! You can put anything in it, and anything on top of it! Enjoy!
