Heart and diabetic healthy entree easy to make and delicious to eat. Boneless/skinless chicken breasts with a yummy fruity slightly spicy salsa on top.

Ingredients:
- 4 boneless skinless chicken breasts
- 2-3 fresh pineapple slices
- 1 cup cut up fresh strawberries
- 1/2 cup finely chopped sweet onions
- 1-2 tsp honey
- 1/2 tsp lemon zest or california lemon peel
- 1/8 tsp red pepper flakes
- 1-2 tsp finely chopped fresh mint
- 1/2 cup low sodium soy sauce
- 2 cloves fresh (chopped) garlic
Steps:
If you do not have honey, you can use sugar or sugar substitute.
- Mix garlic with soy sauce and marinate the chicken breasts.
- While chicken is marinating, grill slices of pineapple for about 2 minutes on each side. This can be done on an outdoor grill. I have a cast iron grill that I can use on a burner or in the oven that I used to grill the chicken.
- When pineapple is done grilling let it cool for a few minutes. While that is cooling mix the remaining ingredients (strawberries, onions, mint, honey, red peppers and lemon peel or zest). Chop the pineapple and add that to this mixture.
- Remove chicken from the marinade and put on grill. Grill until cooked through.
- Put a chicken breast on a plate and spoon the salsa over it. Enjoy!
Delicious hot but also good served cold.
