Mix meat seasoning well in balsamic vinegar and stir in the olive oil. Place pork into a baking dish and pour marinade over the top. Marinate, covered, at room temperature for 2 hours, turning occasionally.
Preheat oven to 350 degrees F.
Bake, basting occasionally until the pork reaches an internal temperature of 145 degrees F, about 1 hour. Let the roast rest for 10 minutes before slicing and serve.
