My granddaughters helped make this, you can choose more veggies to add if you wish.
Preheat oven to 400 degrees F.
Into 12 cup casserole add broth, rice, meat, onion, soy sauce, and stir fry sauce. Dump in all vegetables except the coleslaw mix. Stir well. Add the coleslaw to the top; gently stir. Pop into oven for 45 minutes. Vegetables should stay somewhat crunchy.
Could serve on a bed of raw spinach.

Mix all ingredients together and pour into a greased 9x13 inch casserole. Bake at 350 degrees F. for 1 hour. Serves 6-8.
Brown meat and onions. In large bowl mix other ingredients. Then put ground beef in; mix well. Bake at 375 degrees F for 1 1/2 hours.
Cook rice; cook the celery and onions in butter. Add meat and brown slightly. Combine remaining ingredients; add to meat and mix well.
Mix beef, rice and veggies in a baking dish. Add milk, stirring thoroughly. Bake 2 1/2 hours at 325 degrees F. When ready to serve, heat mushroom soup and pour over top.
Precook three cups rice. Brown beef in skillet. Drain, stir in onions, green pepper and garlic. Saute' until tender. Add seasonings, tomato sauce and stewed tomatoes.
Fry hamburger and onions until brown. Add taco seasoning and tomatoes. Cook rice with reserved tomato juice. Add enough water to make 2 1/2 cups. . .

Stuffed Cabbage Casserole
2 cups grated cabbage (or cole slaw mix)
1/2 pound ground beef, pork or turkey
In large skillet or medium saucepan, cook meat until lightly browned. Drain fat and place meat in a covered container.
In same skillet, place cabbage and 1 cup of tomato sauce. Saute for 20-30 minutes or to desired tenderness.
Mix cooked meat and rice into the cabbage. Add the rest of the tomato sauce and broth. Season to taste with salt, pepper, dried minced onion, dried parsley flakes, garlic powder, paprika, onion powder, etc. Heat thoroughly.

Cabbage Roll Casserole
1 medium head cabbage
1 lb. ground beef
1 onion, chopped
&frac; tsp salt
&frac; pepper
&frac; cup rice
1 can (29 ounce) tomato sauce or more (you want it to be saucy, add what you think best)
Mix ground beef, onion, salt and pepper and rice. Mix well.
Chop cabbage and place 1/2 of the head in a black covered enamel roaster. Place ground beef mixture on top of the cabbage. Put rest of head of cabbage over the meat mixture.
Mix tomato sauce with water. Pour over cabbage and meat.
Bake at 300º oven for 3 hours or 350º for 1 &frac; hours or till cabbage is tender.
This is so much easier than making stuffed cabbage rolls and the taste is the same!
