I am growing some peach trees from pits. They are in pots at the moment. They are over 18 inches tall. When is it the correct time to plant them in the ground and what would I need to strengthen the stalks?

You should wait until after the last frost. Normally in most areas this is around April or May. After planting them in the gound you can add a stake to the tree to help it grow up a bit better. Trees take around 3 to 5 years to grow up and become strong to bear fruit.
Fall is the best time to plant. I would stake them if I were you.
I agree with Judy, automn is the best time. Here we say 25th of november is the best day. If you keep them in pots until the stalks are not green anymore but actually turning into wood, they will be strong enough and ready to be planted in the ground but you must check that the roots have not started turning round at the bottom of the pot.
