I watched a "how to grow" video and it suggested that you peel off the brown outed layer of the avocado seed and then place it in water. I was really surprised to find next day that the seed was almost covered in a brown layer again. Is this unusual, has anyone had that happen?

This can happen from time to time. When I grow the tree from a seed I usually use toothpicks to keep the seed partially submerged in water. You should keep the broad end of the seed in water. Cover half the seed with water and place it in your window. Make sure it gets plenty of sun. When the water in the glass falls below the half way point, add more water.

It can happen. Here are the steps I use in order to grow my own from seed:
Step 1
Remove and clean pit.
Step 2
Pierce with four toothpicks.
Step 3
Step 4
Watch it sprout! :)
The one I read said not to take the brown stuff off the pit. It protects the seed.
