Diamond Post Medal for All Time! 5,887 Posts This is a great, hearty soup that is not super expensive to make an contains ingredients that most of us keep in our kitchen most of the time. Very easy and good!
Ingredients:
- 1 lb. lean ground beef
- 2 cups tomato juice
- 1 cup diced potatoes
- 1 cup diced celery
- 1/2 cup diced onion or 1 Tbsp. instant minced onion
- 1 Tbsp. green pepper, chopped (optional)
- 1/4 cup uncooked rice
- 5 cups water
- salt and pepper, to taste
- 1/2 tsp. garlic salt
- 1/2 tsp. seasoning salt
- 1 Tbsp. Worcestershire sauce
Directions:
Brown lightly the ground beef; drain off fat. Add rest of ingredients and simmer 1 hour. Add more liquid if needed.
You can exchange any of the vegetables in this recipe for almost any other type of vegetable you want for a different flavor.

Sounds like Albondiga Soup (Mexican soup). The only change is we add the rice to the meatballs. It is quite tasty.
