Silver Post Medal for All Time! 293 Posts This cake is delicious! I honestly have never made one that I liked better. And yes, this is still dessert, and still sugary... but it is much healthier than your average box cake. Please try this, it's so good!
Total Time: About 20- 30 minutes prep
Yield: 13" by 9" cake

Ingredients:
- 3 cups whole wheat flour
- 2 cups brown sugar
- 2/3 cup cocoa powder
- 2 tsp baking soda
- 1 tsp sea salt
- 2 cups cooled coffee
- 1 cup extra virgin olive oil
- 4 tsp vanilla extract
- 4 Tbsp apple cider vinegar
- 1 cup dark chocolate chips
- 6 Tbsp natural peanut butter
- 2 Tbsp coconut oil
- 1 tsp vanilla extract
- 1 tsp almond extract
Steps:
- Preheat oven to 375 degrees F. Mix your flour, sugar, cocoa powder, baking soda and salt in a large bowl.
- Mix your coffee, oil, extract and vanilla in another bowl. Add this to your dry ingredient bowl and stir until combined.
- Pour into a greased 13" by 9" dish. Bake at 375 degrees F for 30 minutes, or until a knife comes out clean.
- In a small pot, add chocolate chips, peanut butter, oil and extracts. Stirring continuously, melt over medium/low heat. Make sure there are no lumps.
- Spread evenly over your cake. This cake is super good eaten in a bowl with milk poured over the top. Yum!:)
