Diamond Post Medal for All Time! 1,298 Posts A good vegetable soup full of nutrients. Made from chicken drumsticks and water for a very, flavorful soup base.

Yield: 4 - 6 people
Ingredients:
- 16 pieces chicken drumsticks
- 1 tsp sugar
- 1/2 package mushrooms
- 1/2 green pumpkin
- 4 carrots
- 1 head broccoli
- 1/2 head cauliflower
- 1 bunch leek
- 1 bunch chard
- 1 gallons water
- 1/2 white onion
- 1 whole garlic
- 2 2 ginger
- 1 tsp salt
- Dash of pepper
- 2 Tbsp fish sauce
Steps:
- Wash and clean the chicken drumstick, sprinkle with a dash of salt. This chicken will be the soup base, and can be eaten.*
- Prep all the vegetables; carrot, leek, broccoli, cauliflower, chard, green pumpkin, and mushroom. Cut to your desired size.
- The garlic, ginger, and white onion will be for the soup base.
- In a large pot on high heat add one gallon of water. When boiling, add white onion halves, garlic and ginger.
- Then, add your drumsticks in the pot and cook the broth on medium heat for 20 minutes so you will get the flavor of the chicken. Remove onion, garlic and ginger.
- Then add mushrooms and leek and when the water boils, add carrot, chard, broccoli, cauliflower, and beet. Add fish sauce and cover the pot for 10 minutes to cook. When it is ready to eat, you can add a sprinkle of black pepper for garnishing.
*Optional: I peeled the skin off the chicken to reduce fat.
