Healthy Scallion Scrambled Eggs

Scallion Scrambled Eggs on plateOne of my friends is an awesome nutritionist who really knows how to take the "blah" out of healthy food, so I've used his tips to create these eggs. I've always had a bit of trouble loving egg whites. They're generally rubbery, tasteless and dull. This version is really easy to make and results in a healthy, fluffy, delicious breakfast.

Cook Time: 7 minutes

Total Time: 12 minutes

Steps:

  1. Lightly spray a medium nonstick pan with cooking spray, or just lightly grease. Heat over medium heat.

  3. Add white parts of scallion to pan and cook a couple minutes.

  5. Whisk together egg, egg whites, and milk.

  7. Pour egg mixture into pan and allow to sit until it you see it cooking around the edges.

  9. Switch heat to low and scramble the eggs once.

  11. Scramble the eggs slowly every once in a while. Doing so over low heat (and not adding any salt or flavorings while cooking) will keep the eggs soft and super fluffy. Add the garlic powder, salt, pepper, and green parts of scallion right before serving.
