This is a wonderful way to serve quinoa alongside fish. It goes well with any entree.
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Yield: 4 cups / 15 side servings
Ingredients:
- 4 cups quinoa
- 2 cups parsley
- 1 cup basil
- 2 tsp lemon zest
- 1/4 cup lemon juice
- 1/2 cup olive oil
- 1 small package tomatoes
- 6-8 sprigs thyme
- Dash of salt and pepper
Steps:
- Cook quinoa. Follow the instructions on the package.

- To make the herb vinaigrette, using a food processor, add parsley, basil, lemon zest, lemon juice, olive oil, thyme and dash of salt & pepper.

- Once quinoa is fully cooked, add to a large bowl. Toss with herb dressing just made and mix evenly.

- Top off with cherry tomatoes. Ready to eat immediately or chilled in the fridge. Good for the week to eat.
