My food partner kept on craving for spicy chicken wings particularly the buffalo wings. We cannot afford to go to a restaurant so I decided to make my own version with his preferred level of spicyness.
Ingredients:
- 250 g chicken wings
- 1 tsp chili flakes (from freshly picked chilies)
- 200 g pack fried chicken breading mix
- 2 lime, sliced (squeeze for the juice)
- 1 egg
- 1 Tbsp tomato ketchup
- 4 Tbsp soy sauce
- 4 Tbsp vinegar
- 1/2 Tbsp pepper
- 3 1/3 cup water
- salt and pepper
- 1 1/2 tsp sugar

Steps:
- Pre-cook chicken in 3 cups water, lime juice and salt. Simmer until chicken is cooked.

- Beat egg.

- Dip chicken wings into beaten egg.

- Then into the breading. Coat very well.
- Fry until golden brown. Place in a plastic container.

- Start making the sauce. Mix ketchup, soy sauce, vinegar, sugar and water. Add chili flakes. Stir to dissolve sugar.

- Simmer until it comes out very thick.

- Pour sauce into chicken. Tightly cover the container and shake until well coated.

- Serve and enjoy!
