Sometimes a baking recipe will call for a small amount of buttermilk. Not only do I never have that on hand, I don't feel like spending $4 or more on a carton when all I need is 1 cup. I found this nifty tip in one of my cookbooks years ago and haven't bought buttermilk since. I can't taste the difference with the end results, either. Tastes just as good!

I've done this for years. Works so well and keeps me from buying a half gallon of buttermilk for a cup or two and then the rest going bad.
I use apple cider vinegar that works well also.
Saco Foods markets a powdered buttermilk. Wonderful to keep on hand for those baking and cooking needs.
I,too, by-passed certain recipes if they called for buttermilk. I am much too frugal too knowingly buy 1 Qt. of fresh buttermilk knowing that I would have to waste 1/2 qt.
Interesting! I have heard of using lemon juice, but never heard of yogurt!
