I just saw this, as I am catching up with un-read email. I have a recipe that I copied recently from the website of All You magazine, which I'm pasting below. I haven't tried it yet, but it seems simple to do. Good Luck.
Homemade Potato Chips
Prep Time: 15 Minutes Cook Time: 20 Minutes Cost per serving (about 8): $0.32
Ingredients
4 large baking potatoes, peeled
1/4 cup canola oil
Salt
Preparation
1. Place racks in top and bottom thirds of oven; preheat to 400ºF. Slice potatoes 1/8-inch thick. In a bowl, toss potatoes with oil until coated.
2. Mist 2 large baking sheets with cooking spray. Place as many potato slices as you can fit in a single layer on sheets. Bake until golden brown, switching baking sheets from top to bottom and front to back twice, 18 to 20 minutes total.
3. Immediately sprinkle chips with salt and cool on wire racks. Repeat with remaining potato slices.
