This is a great way to use up milk. I made it chocolate by adding 3 Tbsp. cocoa powder to the sugar/cornstarch/egg mixture. I like this recipe because it doesn't have a lot of sugar in it. I topped mine with shredded coconut.
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes
Yield: 4-6
Ingredients:
- 1/3 cup sugar
- 2 Tbsp cornstarch
- 1/8 tsp salt
- 3 Tbsp cocoa, optional
- 2 eggs, beaten
- 2 cups milk
- 2 Tbsp butter or margarine
- 2 tsp vanilla

Steps:
- Mix the sugar, cornstarch, cocoa powder (if using)and salt in a saucepan.
- Add the eggs to the sugar mixture and slowly stir in milk until combined. I found that a whisk is the best way to combine the ingredients.

- Cook over medium heat, stirring constantly, until the mixture thickens and boils. Boil and stir 1 minute.
- Remove from heat. Stir in the butter and vanilla.

- Let it cool off around a half an hour.
- Chill in the refrigerator until ready to serve.
