Diamond Post Medal for All Time! 1,246 Posts I came up with this cake when my husband had the flu and asked, "Why do all things honey lemon have to be medicine?" Let's just say that's been remedied. This cake is very moist and always hits the spot. I've gotten asked for the recipe by everyone who has tried it, even non-bakers. I used an amazing local honey from Washington state, but I have been successful making this using all kinds of honey (squeezy bear, too).
Total Time: 50 minutes
Yield: 10 servings
Ingredients:
- 1 cup all purpose flour
- 1/4 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 egg
- 1/2 cup unsweetened applesauce
- 1/2 cup honey
- 1 Tbsp butter or oil
- 1 Tbsp lemon zest
- 1/4 cup lemon juice
- Glaze
- 3/4 cup powdered sugar
- 3 tsp lemon juice and some lemon zest
Steps:
- Preheat oven to 350 F and grease a 9 x 9 inch baking pan. Combine egg, applesauce, honey, butter or oil, zest and lemon juice. Whisk thoroughly.
- Combine flour, baking soda, baking powder, and salt. Whisk thoroughly.
- Fold dry ingredients into wet, eliminating all lumps.
- Pour batter into pan.
- Bake in 25 to 30 minutes or until a toothpick comes out clean. Remove and cool.
- To make the glaze, combine the powdered sugar, lemon juice and zest. Mix with a clean whisk until it is smooth.
- Pour over the cooled cake.
- In this example, I cut my 9 inch cake and half, put a bit of glaze on layer one, then most on the very top.

Looks good and more healthy then most. I'll be trying it and will probably add poppy seeds.
