Hot Water Fried Cornbread
Our son made some of the best fried cornbread I had ever eaten. He used boiling water to mix with the cornmeal. The boiling water causes the starch in the corn to crystallize and the cornbread comes out extra crispy. I just had to try making it myself and it turned out scrumptious.

Hot Water Fried CornbreadOur son made some of the best fried cornbread I had ever eaten. He used boiling water to mix with the cornmeal. The boiling water causes the starch in the corn to crystallize and the cornbread comes out extra crispy. I just had to try making it myself and it turned out scrumptious.

When making this cornbread, the measurements don't have to be exact. Just add what you think you need and stir it together to get the right consistency.

Cook and freeze any leftovers and heat up for another meal. To reheat, place the frozen patties and bake for 7-10 minutes or until sizzling hot.

It will be crunchy and taste just like it did when first cooked. In fact, it is so good that I'm going to make a big batch and put it in the freezer so when we want some, all I have to do is heat it up.

Ingredients:

  • 2 cups cornmeal
  • 2 cups boiling water (not exact, so have plenty on hand.)
  • 2 Tbsp melted butter
  • dash salt
  • a little sugar if desired
Ingredients for cornbread.
 

Steps:

  1. Mixture is going to be hot to handle, so mix salt and cornmeal together in a saucepan with a handle.
  2. Heat water, approximately more than the cornmeal, to a rolling boil.
  3. Pour boiling water into the corn meal and mix together until you get the consistency of mashed potatoes. Stir in the butter.
  4. Mixing the ingredients for cornbread together.
     
  5. Let the mixture cool until you can handle it.
  6. The cornbread mixture after it has been mixed up.

  7. Make balls of dough then flatten into patties.
  8. Small pats of cornbread, ready for frying.
     
  9. Fry in hot vegetable oil or bacon grease until browned on each side.
  10. Frying cornbread in a cast iron pan.

  11. Transfer patties to a container lined with paper towels.
  12. Frying cornbread in batches in a cast iron pan.
     
  13. Sprinkle with salt.
  14. Enjoy.

Set the temperature at 425 degrees and bake for 7-10 minutes or until sizzling hot.

This just sounded like a winner so we tried it but added some finely chopped lightly sauteed Vidalia onions as we were having fish and these turned out better than most hush puppies.
Very nice - but no leftovers to freeze. Have to make a larger batch next time.
