Our son made some of the best fried cornbread I had ever eaten. He used boiling water to mix with the cornmeal. The boiling water causes the starch in the corn to crystallize and the cornbread comes out extra crispy. I just had to try making it myself and it turned out scrumptious.
When making this cornbread, the measurements don't have to be exact. Just add what you think you need and stir it together to get the right consistency.
Cook and freeze any leftovers and heat up for another meal. To reheat, place the frozen patties and bake for 7-10 minutes or until sizzling hot.
It will be crunchy and taste just like it did when first cooked. In fact, it is so good that I'm going to make a big batch and put it in the freezer so when we want some, all I have to do is heat it up.

This just sounded like a winner so we tried it but added some finely chopped lightly sauteed Vidalia onions as we were having fish and these turned out better than most hush puppies.
Very nice - but no leftovers to freeze. Have to make a larger batch next time.
