I have recently purchased some pill bugs and they have just had a heap of babies. I am just wondering how long before they mature and what is a good age to be selling them as I'm going into breeding and selling them.

The tiny babies that you are seeing now are about 2 months old. The mother hatches the eggs and the babies live with her until they finally outgrow the shell. Then they shed the shell and live with the mother and father until they are roughly a year old. At this time they will make their own den and find a mate and start to reproduce.
I would say that you have around 8 or 10 months to wait until you can start to sell these babies off. If you want to make a busines sit is a good idea to leave a few female and male bugs with you so they can reproduce. Considering it takes almost a year to sell them off you'll need to have some new babies coming and growing up.
They are mature enough to reproduce at 1 year old.
They go through two stages of development, egg and adult.
