Olives with pits still inside them taste much better than the ones that have been punctured and brined. When opened up, the natural juices and flavours escape into the jar of liquid. Pitting olives at home without a pitter is very easy. Just take something like a meat tenderizer, potato masher, or even the side of a heavy knife, and give the olive a good whack. The pit will pop right out.
