A tradition in our family is making homemade turkey noodle soup from our leftover turkey. My husband has always been the one to make the homemade noodles which his mother always used to make. The noodles are thick, hearty and delicious!
Prep Time: 30 minutes
Cook Time: 45 minutes
Total Time: 75 minutes
Yield: 6
Ingredients:
- Soup
- 1 cup carrots
- 1 cup celery
- 1 cup onion
- 1 cup leftover turkey, cut into bite size pieces
- 4 Tbsp chicken bouillon
- 12 cups water
- Noodles
- 6 eggs
- 6 Tbsp milk
- 4 cups flour
- 1 tsp salt
Steps:
- Using a chopper (or by hand), cut celery, onion, and carrots into small pieces.
- Place 12 cups of water and bouillon into large soup pot. Add vegetables and turkey. Simmer for 30 minutes.
- Meanwhile, prepare noodle dough. Add eggs, milk, salt, and flour to large mixing bowl. Mix well.
- Roll out onto floured surface.
- Roll dough up jelly-roll style. Cut into pieces.
- Unroll "strips" and add to boiling soup. Cook noodles for 5 minutes.
