I tried searching and I can't find anything about what this bug is. I think it is a roach, but it doesn't match any descriptions from pest sites for any roach type. Any ideas?

It is a cockroach. Clean up all food crumbs, fix any leaks and spray with an insecticide
I agree with you that it does not resemble any cockroaches I am familiar with. They usually don't have teardrop shaped bodies.
There are German Cockroaches with similar coloring (which I have never seen in person...but even that doesn't look right):
Silver fish and fire brats do but the coloring isn't right.
You may want to jar it up and take it to the hardware store or send the photos to your home extension office. Here is a locator:

In the mean time, get all of your dry goods and such into the fridge and vacuum up any bugs. Take the vacuum cleaner bag outside and the can away from the house.
Hopefully this will resolve the issue and ID'ing it will be a moot point.
